I’m admittedly not a Starbucks girlie, but I was walking by yesterday and saw their sign for their Pineapple Cloud Cake and I immediately thought — I want to turn that into a cocktail!

Now, I have to admit that I don’t actually know what said cloud cake tastes like. But this is what I would imagine it would taste like in drink form! And this tiki-pineapple-amaretto situation is absolutely delicious.

INGREDIENTS:

  • 2 oz pineapple juice

  • 1.5 oz white rum

  • 3/4 oz amaretto

  • 1/2 oz cream of coconut

  • Dash ground turmeric

  • 1 egg white

METHOD:

Add white rum, amaretto, pineapple juice, cream of coconut, turmeric and egg white to a cocktail shaker. Shake vigorously without ice.

Add ice, then shake for another 10-15 seconds.

Strain drink into chilled coupe glass. Garnish with a pineapple frond, and enjoy.
