Hot Honey Pineapple Mojito

Have you ever had hot honey in a mojito?! This was my first time and it was gooood.

I’m admittedly not a huge fan of pineapple, but I loved it paired with the hot honey! It’s the perfect little bit of sweet and spicy.

INGREDIENTS:

  • 2 oz white rum

  • 1.5 oz pineapple juice

  • 3/4 oz lime juice

  • 1/2 oz hot honey syrup

  • 4-6 mint leaves

  • Soda water

METHOD:

Add fresh mint, lime juice and hot honey syrup to a cocktail shaker. Lightly muddle.

Add white rum and pineapple juice. Add ice, then shake until chilled.

Strain into highball glass filled with ice. Top with club soda.

Garnish with some pineapple (I used a dehydrated piece) and more fresh mint.

Hot Honey Syrup:

  • 1/2 cup hot honey

  • 1/2 cup water

Combine hot honey and water in a small saucepan over medium heat. Stir occasionally until honey has dissolved.

Allow to cool, then transfer into an airtight container.

Store in the fridge, and your syrup should last a couple weeks!

TIP: want it a little less hot? Do 1/4 cup hot honey and 1/4 cup regular honey.
