Strawberry Rhubarb Margarita

I am so excited that rhubarb season is here! I finally found some fresh rhubarb at the farmer’s market over the weekend, and immediately whipped up this Strawberry Rhubarb Margarita. You’re gonna want to make one for yourself, too!

INGREDIENTS:

  • 2 oz tequila

  • 1 oz rhubarb liqueur

  • 1/2 oz rhubarb syrup

  • 1/2 oz lime juice

  • 3-4 fresh strawberries

METHOD:

Start by brushing the side of your glass with agave or rhubarb syrup, then rolling it onto a plate with flaky salt and some grated freeze-dried strawberries. Place your glass in the freezer to set.

Add strawberries, rhubarb syrup and lime juice to a cocktail shaker. Muddle until berries are broken down.

Add tequila and rhubarb liqueur. Add ice and shake until chilled.

Double strain into chilled glass filled with ice. Garnish with a strawberry, and enjoy!

Rhubarb Syrup:

  • 1/2 cup sugar

  • 1/2 cup water

  • 1/2 cup rhubarb, chopped

Wash rhubarb stalks thoroughly. Remove the ends, then chop into small pieces.

Combine sugar, water and rhubarb in saucepan over medium heat. Stir occasionally until sugar dissolves.

Bring to a boil, then reduce heat and let simmer for 10 minutes.

Remove from heat.

Once cool, strain syrup into an airtight container and store in the fridge.
