You NEED to try this Roasted Tomatillo Margarita!
When I recently walked past tomatillos in the grocery store, I knew I had to use them in a margarita. And holy cow — the flavor here is just top tier.
Tomatillos themselves aren’t spicy, so maybe next time I’ll give you guys a version with some heat!
INGREDIENTS:
2 oz tequila
1.5 oz tomatillo puree
1/2 oz orange liqueur
1 oz lime juice
1/2 oz agave
4-5 cilantro leaves
METHOD:
Start by brushing the side of your glass with agave, then sprinkle with sea salt. Pop your glass in the freezer to sit and chill while you make your marg.
Add cilantro, lime juice and tomatillo puree to cocktail shaker. Lightly muddle.
Add tequila, orange liqueur and agave. Add ice, then shake until chilled.
Double strain into prepped glass filled with ice. Garnish with fresh cilantro and another tomatillo, if you want to be extra!
Tomatillo Puree:
Preheat oven to 425°. Roast tomatillos for 15-20 minutes.
Allow to cool, then blend tomatillos until smooth.
4 medium tomatillos should give you about 4 oz puree.
